I wanted to make a hearty side with some protein in it to go with my ham. I went through pinterest, got inspired, and came up with this. Beans and rice are a staple in latin households, and mine is no exception!

You’ll need:

4 green onions, chopped (keep lighter and darker portions separate)
2 cloves garlic, minced
1 quart chicken broth
1 (4 oz) can chopped green chilies
1 (14.5 oz) can black beans, rinsed and well drained
2 cups rice
1/3 cup chopped cilantro

broth

Pour broth into a deep frying pan at medium heat.

scallions

Add chopped scallions.

garlic

Add chopped garlic.

chile

Add green chile.

rice

Add rice. Bring mixture to a boil.

beans

Then add beans. Lower the heat and cover as the rice cooks, about 15-20 minutes. Add more broth if needed.

cilantro

Finish off with some chopped cilantro. Easy peasy!
